A 50 degree and sunny day here in Minnesota had me jumping the gun and craving some food fit for Summer. Never mind that it's only the first day of Spring, I wanted something fresh, crisp and, of course, simple. The busier I get with work and the later I get into pregnancy, the more I find myself turning to semi-homemade meals to get through the work week - and ain't nothing wrong with that!
If you have an afternoon to spend in the kitchen, you go right ahead making your own pasta from scratch and a beautiful Italian or greek dressing, I'm sure it'll be absolutely even more delicious! But for the rest of us, I'm here to tell you that a couple store bought ingredients are going to save you time and energy while still resulting in a fresh and delicious meal.
We had this tonight for our main course but boy did it leave us longing for a Summer BBQ. Serve this as a side for some smoked brisket or bbq ribs and oh my gosh, you'll have a meal fit for a king. I. Can't. Wait. #isitsummeryet!?!
Ingredients
2 c. thinly sliced/shredded cabbage
1/2 of a seedless cucumber - cubed
2 roma tomatoes - cubed
4 - 5 c. (20oz) cooked cheese tortellini
4 - 5 strips of bacon - cooked and crumbled
1 c. basil parmesan dressing (I used Archer Farms, you can use your favorite Greek or Italian dressing)
2 - 3 oz. crumbled Feta cheese
Directions
Mix everything together. Let chill for at least 20 minutes. Serve.
