Again, not really a new recipe but it turned out so good I had to put the idea out there! If you made the Soy Glazed Pork Tenderloin, hopefully you have some leftovers because this is the perfect use for them!
Take the leftover pork and chop into small cubes, you'll want about 2 cups worth. Drizzle a splash of olive oil in a large saute pan and heat over medium high heat. Add pork and cook just until it's heated through and starting to brown. Add a cup of shredded carrots, and two green onions, chopped. Drizzle with soy sauce, stir, and cook for about a minute or two. Serve in lettuce cups (I used some leaves from head lettuce courtesy of our CSA farm share program, with Fox and Fawn Farm). Enjoy!
